Meats, cheese, soups, and stews - that's Dutch cuisine for you. Many restaurants in the Dam dish up these flavours along with the ever popular fresh North Sea Fish.

Unlike in the rest of Europe, vegetarians are well catered for in Amsterdam. Many excellent vegan and whole food eateries dot the canalsides of the Jordaan area while several of the larger squats have metamorphised into all-comer veggie canteens. You can drag your sulky meat-eating friends to both.

Oh and make sure you check out the Indonesian restaurants. They are quality.

Tipping isn't really part of the culture so don't feel you have to do it. Round up to the nearest 10 guilders. Leave 1 or 2 guilders for table service. Oh but do tip doormen in clubs.

Tell them what kind of thing you like and they make a five course menu up. Style of cuisine is French/Belgian/Dutch (i.e. meat with a rich sauce) Wine is specially selected for you by a rather enthusiastic wine buff. Expensive.

hearty veggie food in quality surroundings
Everything for the experienced vegetarian. Thick soups, crunchy salads, homemade pasta, sandwiches, omelettes and bagels. There's also meat.

best fish in town. period.
Service is to the usual Amsterdam standard but wine choices are good. Lobster is 75 guilders. It's wise to call in advance for reservation (020) 624 1831

rough and ready veggie café of some repute
Some would say 'shabby'. Some would say 'home grown'. A bit of a trek, but you can't argue with the food. Some alternative health leanings but don't go there if you're in a rush - service is very Dutch (i.e. slow).

The ultimate vegan restaurant in a dayglo setting. Go very hungry and order the Vegetarian platter. Service is slow and stroppy though.
